Dichlorodiphenyltrichloroethane (DDT), used until its ban in the United States in 1972, can persist in soil for hundreds of years (CDC, 2002). Recently, glyphosate (Roundup®) has been demonstrated to be the most important causal factor associated with celiac disease and more generally gluten intolerance affecting 5% of the total population of North America and Europe (Samsel and Seneff, 2013). Despite its relatively benign reputation, glyphosate was among the most toxic herbicides and insecticides tested by Mesnage et al. (2014). Adapted from 5th century Athenian red figure kylix.
